MASH <3 Kobe
It is probably no secret that we care a lot about meat. It probably didn’t pass by anyone either that we are one of the few restaurants in the world that serves genuine Kobe meat imported directly from Japan. We are actually the restaurant with the greatest import of Kobe in the world.
When Japan slowly started to open up their export of Kobe back in 2012, we managed to become one of the first restaurants to spoil our guests with this mythical meat already in 2014. And we will never get tired of Kobe. Therefore, we will take 50 % of all Kobe exported from Japan in 2017 so you can put your teeth into even more delicious cuts.
What Was That Kobe, Again?
Restaurants all over the world have had ’Kobe’ on their menus for many years. It is not real Kobe, however. Kobe is a protected title only used about cattle of a specific race that lives in Japan’s Kobe region and is fed, kept and butchered under very particular conditions.
Wagyu, on the other hand, is just the name of the Japanese cattle that the Kobe meat also comes from. But not all Wagyu is Kobe, as only 3,000 cattle of the race Tajima are graded as Kobe. And only 300 of these are exported every year.
So if you want to experience the fabled meat here in Denmark, you only have to book a table at the nearest MASH restaurant – or visit one of our restaurants in London or Hamburg. Believe us: Kobe is worth travelling for!
NB: Did you notice the ’XO’ quality mark next to our Kobe in the menu? It means that our cattle has been selected personally by the Master of Wagyu, Hisato Hamada. Yes, yes, of course we just had to show off!
